We are planning on configuring a new Linux box with version 7.4 and then install CL 6.2.  Is there any reason why we cannot simply “copy” our current TEST system using VM tools and then upgrade?  Is it important to install “fresh” 6.2 first and then migrate our environment as needed?

With regards to your table concerns, do you have 6.x in Test or 5.x?  If 5.x, then I can understand why there is conflict with Tables.  However, I’m really interested in any significant concerns with upgrading from 6.1 -> 6.2.  I’m hoping we will not find any 😉
