I am assuming you mean the messages and not the protocols.
There are standard defined and commonly followed terminatrs for the various standard messages such as X12, HL/7, EDIFACT, etc. However, each tradiing partner might use different terminators either not knowing the standard or not caring.
So you would have to look in multiple locations for each standard but the most important place to look is the trading partner’s specification to find out what they want or are providing.
Some of this is available on the iternet as far as the standard is concerned – most likely the standards organization web site.

I don’t use java so I can’t help a lot but if you turn the engine ‘noise’ all the way up do you get a hex display of what is being presented to the protocol?
